Cooker Operator – Gloucestershire – £23k per annum

Duties
- Partner will be knowledgeable in blending, cooking, and powder throwing. They will be expected to operate in all areas and will cover breaks with the other operators in their area
Cooking
- Set-up, change over, operate, clean, and tear down the cookers and related equipment (including but not limited to cheese pumps, hoppers, filters, and piping)
- Make adjustments and minor repairs to equipment to ensure proper operating conditions.
- Writing and logging work requests as needed to keep equipment in good conditions.
- Pre-check and start all equipment to include (but not limited to) pumps, cookers, cooker motors, and filters
- Monitor close control of cheese temperature in cookers and in discharge pipe.
- Use basic IT/IS functions
- Make adjustments or corrections on control panel.
- Keep proper cheese level in hopper and agitate crust to inside of cheese.
- Identify rejectable cheese and understand process to correct issue.
- Responsible for proper housekeeping at the work area and for proper sanitation of equipment.
- Perform sanitation duties in area and other areas as needed
- Prepare hand wash stations prior to start up and maintain during shift.
- Work with Leaders and fellow partners to ensure Food Safety and Partner Safety. Understand and execute standard operating procedures relative to position. Perform all PCP and CCP checks required for position. Follow reaction plan for Food Safety, Food Quality and customer requirement outages and by contacting TA/TL. Be able to identify and understand customer requirements and assist in assuring proper operation and product. Record accurate data on production reports.

Blending
- Operate in a food-safe manner, following all GMPs and ensuring proper procedures are followed
- Follow all safety instructions and processes, specifically following proper Lock Out / Tag Out processes
- Use correct ergonomic lifting techniques
- Set-up/disassemble blender, conveyors, pumps, and related equipment
- Maintain moisture control in blenders and gather samples of cheese from each blender for lab analysis
- Maintain and control adequate blending times and procedures
- Check out panel switches before start-up and pre-run.
- Fill and complete blender data logs for each blend.
- Use basic IT/IS functions for scanning and traceability of material
- Maintain production schedule
- Accurately prepare the ingredients necessary for each blend according to the blend sheet. This includes unboxing cream and enzyme, weighing necessary ingredients, and adding acetic acid, sorbic acid and coloring.
- Have clear, concise communication with the lab partners
- Adding correct adjustments sent out by the lab.
- Record all lot and sub-lot numbers of ingredients used. Keep track of all ingredients used during the shift to assure proper accountability.
- Support during assembly and disassembly in production areas as needed
- Perform CIP of equipment when necessary
- Perform sanitation duties in area and other areas as needed
- Prepare hand wash stations prior to start up and maintain during shift
- Responsible for proper housekeeping at the work area and for proper sanitation of equipment while operating it. Work with Leaders and fellow partners to ensure Food Safety and Partner Safety. Understand and execute standard operating procedures relative to position. Perform all PCP and CCP checks required for position. Follow reaction plan for Food Safety, Food Quality and customer requirement outages and by contacting TA/TL. Be able to identify and understand customer requirements and assist in assuring proper operation and product. Record accurate data on production reports.
Powder
- Operate in a food-safe manner, following all GMPs and ensuring proper procedures are followed
- Follow all safety instructions and processes, specifically following proper Lock Out / Tag Out processes
- Use correct ergonomic lifting techniques
- Set-up, change over, operate, clean, and tear down the powder room and related equipment (including but not limited to cheese pumps, hoppers, filters, and piping)
- Supply lines with sufficient powdered ingredients to prevent downtime
- Accurately prepare the ingredients necessary for each blend according to the blend sheet.
- Record all lot and sub-lot numbers of ingredients used. Keep track of all ingredients used during the shift to assure proper accountability.
- Ensure necessary ingredients are in the powder area to prepare blend correctly.
- Prepare powder necessary for each blend according to the blend sheet. This includes the transfer of powder from storage and proper identification of powders
- Use basic IT/IS functions for scanning and traceability of material
- Opening bags of powder and add to a hopper in a clean and efficient manner
- Must be able to identify and understand customer requirements. Must be able to read and understand production orders.
- Assist with set up and tear down in the setup, grinder, and blender rooms
- Perform sanitation duties in area and other areas as needed
- Prepare hand wash stations prior to start up and maintain during shift
- Responsible for proper housekeeping at the work area and for proper sanitation of equipment while operating it. Work with Leaders and fellow partners to ensure Food Safety and Partner Safety. Understand and execute standard operating procedures relative to position. Perform all PCP and CCP checks required for position. Follow reaction plan for Food Safety, Food Quality and customer requirement outages and by contacting TA/TL. Be able to identify and understand customer requirements and assist in assuring proper operation and product. Record accurate data on production reports.

What you need to succeed
- Must be able to read and keep accurate, legible records.
- Must be able to communicate effectively
- Must be able to properly and safely operate a pallet jack
- Must be computer literate and be able to demonstrate basic IT/IS abilities (using a scanner, recording documentation electronically, navigating a user interface, printing, etc)
- Must be ready and able to work on all days of scheduled production and work overtime when necessary.
- Must have knowledge of basic mathematics
- Must have a satisfactory attendance record, commendable, or better performance in teamwork and overall work performance.
